Abstract:

For land-rich institutions, leasing parcels of land to local farmers can support all facets of sustainability. Small farms gain acreage, enhancing the local food system; dining halls get direct access to fresh products at lower prices; students may easily visit and volunteer; unused land is put into production. This briefing describes how one institution has developed relationships with an organic vegetable grower and Scottish Highland cattle farmer. It includes an overview of how the collaboration has impacted the Facilities and Food Services departments and how students have gotten involved. Recommendations for other institutions will be provided
